Swiss cheese — a type of hard cheese that belongs to the rennet group with a high second heating temperature. Swiss cheese is made in the form of a low cylinder with a diameter of 65 to 80 cm and a height of 12 to 18 cm. The weight of a cheese is from 40 to 90 kg, sometimes up to 130. It has a durable smooth rind (film), tightly adhering to the surface with traces of the cloth used in the cheese-making process. There may be slight dampness on the surface. The texture is pliable and uniform throughout the thickness of the cheese; usually, there are large, up to 4 cm, round or oval holes (eyes) formed as a result of bacteria releasing carbon dioxide. The eyes may be absent in certain sections of the cheese.
The cheese has a moderately pronounced spicy sweetish taste and a distinct aroma.
Color ranges from white to pale yellow.
